Butterball Cookies

8 Tbs. butter
3 Tbs. honey
1 cup all-purpose flour
1/2 tsp. salt
1 Tbsp vanilla
1 cup pecans, chopped medium fine
3/4 cup confectioners' sugar

Preheat oven to 300F.
Grease cookie sheets.
Cream butter, beat in honey, then gradually mix in flour. Add pecans, mix well.
Wrap dough in plastic wrap and refrigerate for 1 hour.
Form balls by hand, about the size of quarters.
Place 2 inches apart on cookie sheet.
Bake for 35 to 40 minutes.
Remove from oven, place on cooling rack and dust with confectioners' sugar.
Once cool enough to touch, roll cookies in confectioners' sugar.
Repeat when completely cool.

These bits absolutely melt in your mouth!
Makes about 3 dozen.
