Chipotle BBQ Sauce

1 tablespoon olive oil
1/2 cup onion -- minced
2 Tablespoons garlic -- minced
1 cup ketchup
1/4 cup balsamic vinegar
2 Tablespoons red wine vinegar
1/4 cup packed brown sugar
1/4 cup strong brewed coffee
8 ounces beer
2 Tablespoons molasses
2 Tablespoons tomato paste
2 Tablespoons Creole mustard (or Dijon)
2 Tablespoons Lea and Perrin's Worcestershire
1 chipotle pepper (seeded) chopped with 1 Tablespoon of the adobo sauce
Few drops liquid smoke
Salt to taste

Heat olive oil in a saucepan.
Saute garlic and onion for a minute or two.
Add all remaining ingredients and simmer 10 minutes.
