1/2 c. butter, softened (mine was cool-ish room temp but not real spready)
1 c . sugar
1/2 tsp. vanilla (I substituted lemon extract because I wanted them REALLY lemony)
1 tsp. lemon zest (I doubled this, in a quest for stronger lemon flavor)
1 Tbsp. lemon juice
1 1/2 c. AP flour
1/4 tsp. salt
1/4 tsp. baking powder
1/8 tsp. baking soda
1/2 c. powdered sugar
Preheat oven to 350.
Cream butter and sugar, add extract, lemon zest and juice. Add dry (except powdered sugar) and mix slowly just until combined. Scrape sides of bowl, as usual, and mix again briefly.
Chill for several hours.
Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
Bake for 9-11 minutes or until bottom of cookies begin to barely brown and cookies have a matte finish (not melty or shiny). Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.From jillsifer
