Mashed Sweet Potatoes with Maple Syrup

3 large or 4 medium sweet potatoes, peeled and cubed
1 tablespoon chopped, peeled fresh ginger
1/2 cup maple syrup
1/2 cup heavy cream
3 tablespoons unsalted butter, room temperature
1 teaspoon kosher salt
1/2 teaspoon black pepper

Place the sweet potatoes in a large saucepan, cover with cold water, and bring to a boil over high heat.
Reduce the heat to medium and cook until the potatoes are tender, about 20 minutes.
Drain and transfer to a plate.
Add the ginger, maple syrup, and cream to the pot and bring to a boil over medium heat. Cook until the mixture is like thick caramel.
Return the potatoes to the saucepan and mash with a fork or potato masher, gradually incorporating the caramel mixture. Add the butter, salt, and pepper. Serve immediately.

Note: I cooked them in the microwave first and then peeled and cubed them. I also used my wonderful microplane grater to grate the ginger.
