Paprika Vinaigrette

1/2 cup olive oil
1/3 cup apple cider vinegar (adjust ratios to your taste)
1 Tbs. balsamic vinegar
1-2 tsp sugar
Up to 1 Tbs. paprika (sweet, not hot)
Salt and freshly ground pepper to taste

Mix vinegar, paprika, salt and pepper, and whisk in oil until emulsified. Best if made ahead so flavors can meld.

I like it on lots of salads, but especially ones that blend crisp lettuces with sweet and savory ingredients:

Romaine with oranges, grapefruit, avocado and red onion

Romaine with thinly sliced apples, walnuts, raisins and gorgonzola
