Spicy Peanut Sauce

2 Tbs. finely minced garlic
1/3 packed cup OR an entire bunch of cilantro leaves and stems
1/2 cup UNSEASONED peanut butter, preferably homemade
1/2 cup soy sauce
1/4 cup sugar (or more)
1 tsp serrano-lemongrass rice wine vinegar
1-2 Tbs. hot chile oil

Pulse garlic and cilantro in food processor until minced. Dump into bowl.
Add remaining ingredients and mix well.
Let sit at room temperature for 1 hour to blend flavors.
This is a BIG flavor peanut sauce.
Great with grilled chicken skewers.

Makes about 1 1/2 cups.
