Green Chile and Brie Soup

1 cup chopped onions
1/2 cup chopped celery
4 Tbs. butter
2 Tbs. flour
16 oz. chicken broth
16 oz. half and half, or milk
1/2 lb. brie without rind
8 oz. chopped green chiles
Salt and white pepper to taste

Sauté onions and celery in butter for 5 minutes. Whisk in flour. Add in half and half or milk and chicken broth. Stir thoroughly. Add brie to soup in small pieces and stir until brie is melted (about 10 minutes.) Add green chiles and simmer for another 2 minutes, salt and pepper to taste, and serve.
