Orange Poppy Seed Cookies
2 cups flour
Mix flour, powder, salt and poppy seeds.
1 1/2 tsp baking powder
1/8 tsp salt
1/4 cup poppy seeds (store in freezer)
1/2 cup unsalted butter
3/4 cup sugar
1 1/2 tbsp orange zest
1/4 cup colored sugar (color's your choice, I use red)
In large bowl, cream butter and sugar. Mix in egg and peel.
Stir in flour mixture until well blended.
Form into four rolls, about 8" long (longer if you want more and smaller cookies). Roll logs in colored sugar. Wrap and chill or freeze.
Preheat oven to 350°F.
Slice rolls into 1/4 to 1/5" slices. Place on parchment-lined cookie sheets and bake for 8 minutes, or until bottoms are lightly browned. Slide parchment onto cooling rack and when cookies are cooled, remove from parchment to clean newspapers. (Note: I have done this last step for years; it absorbs a little of the grease from the cookies.)
